Celebrate Halloween with the perfect pumpkin cake ?

Pumpkin and coconut cake

As you already know, our autumn collection is inspired by the colors, textures and tasty products of this season. Probably, these next months the pumpkin will be the most famous ingredient in every table and pantry. Although these days many like to decorate them, we prefer to enjoy its flavor to the fullest.

To celebrate Halloween, we want to share with you a very easy and mouthwatering recipe that we love and we are sure that you are also going to enjoy. It’s a perfect plan for these short afternoons that must be enjoyed together with a big cup of tea or a delicious hot chocolate.

Ingredients

  • Refrigerated short pastry
  • 300 g  pumpkin
  • A few dates or honey
  • 150 g flour
  • Coconut oil or olive oil
  • 50 g grated coconut
  • 3 eggs
  • 1 yeast envelope
  • Salt

Preparation

  1. Peel and chop the pumpkin and boil it in some water. When it’s soft, remove from the flame and leave to stand until it’s cold.
  2. At the same time, in a separate bowl whisk together eggs until it gets thick.

WhatsApp Image 2019-10-30 at 21.12.50    3. Add flour, yeast, grated coconut and salt.               If you want to sweeten it, add a few dates or some          honey. Whisk together and add the smashed                    pumpkin.

4. Grease the mould with coconut or olive oil and shape the short pastry dough into it.

5. Pour the pumpkin mixture over the dough and oven for 30 min. at 180º.
